Parmesan Crusted Chicken Breast

This parmesan crusted chicken breast is a quick and easy low carb, high protein chicken dish. 


  • 2/3 cup grated Parmesan cheese
  • 4 boneless skinless chicken breast
  • 1tbsp Dijon mustard
  • ½ tsp freshly ground black pepper


  1. Pound chicken breast out to about a ½” thickness
  2. Rub the top side of chicken with half the mustard
  3. Sprinkle with half the cheese, pressing lightly to adhere cheese to chicken
  4. Season with salt and pepper
  5. Flip chicken over and repeat
  6. Spray large skillet with cooking spray and heat over medium high heat
  7. Place chicken in warmed pan and cook, without moving, until the cheese forms a deep brown crust (about 3-4 minutes)
  8. Flip and repeat on the other side, make sure to cook chicken through (about 3 minutes)
