
Parmesan Crusted Chicken Breast
This parmesan crusted chicken breast is a quick and easy low carb, high protein chicken dish.
Ingredients:
- 2/3 cup grated Parmesan cheese
- 4 boneless skinless chicken breast
- 1tbsp Dijon mustard
- ½ tsp freshly ground black pepper
Directions:
- Pound chicken breast out to about a ½” thickness
- Rub the top side of chicken with half the mustard
- Sprinkle with half the cheese, pressing lightly to adhere cheese to chicken
- Season with salt and pepper
- Flip chicken over and repeat
- Spray large skillet with cooking spray and heat over medium high heat
- Place chicken in warmed pan and cook, without moving, until the cheese forms a deep brown crust (about 3-4 minutes)
- Flip and repeat on the other side, make sure to cook chicken through (about 3 minutes)
